Zubereitung: 30 Minuten
Zutaten: Rindsfilet
Kartoffeln
Butter
Kräutersalz
Rosmarin

Rindsfilets
1 Stunde vor Zubereitung aus Kühlschrank nehmen und evt. marinieren. Grill anfeuern.
Bratkartoffeln mit Rosmarin (30 Minuten):
Kartoffeln
ungeschält in Scheiben schneiden. Butter in einer Bratpfanne schmelzen und
Kartoffelscheiben auf jeder Seite ca. 15 Minuten bei mittlerer Hitze golden
braten. Mit Kräutersalz und Rosmarin würzen.
Amandines
sind neben Süsskartoffeln meine Lieblingskartoffeln. Sie haben nicht nur einen
lieblichen Geschmack sondern können samt der Schale verwertet werden, da diese
sehr dünn ist (wie bei Frühkartoffeln).
Salat (15 Minuten):
Olivenöl,
Balsamico, Kräutersalz und (frischen) Thymian in einer Salatschüssel mischen. Avocado
halbieren, Stein entfernen (mit Messerspitze hineinstechen und herausziehen) ,
schälen und in Würfel schneiden. Cherrytomaten halbieren oder vierteln und
alles in die Sauce geben. Kann gut 15 Minuten marinieren bis zum Verzehr…
Rindsfilets vom Grill (15 Minuten):
Das
Rindsfilet in dicke Steaks schneiden, mit Specktranchen umwickeln und mit einem
Zahnstocher fixieren. Auf jeder Seite ca. 5 Minuten grillieren. Bevor man sie
vom Grill nimmt, ein Stück Kräuterbutter auf den Filets platzieren und zergehen
lassen.
Die Filets
können selbstverständlich auch in der Bratpfanne gebraten werden und benötigen
bei mittlerer Temperatur ebensolange. Ich bevorzuge Fleisch von Rindern, die
das ganze Jahr draussen leben, ihr Futter selber suchen und viel Auslauf haben.
Das Fleisch ist eindeutig lockerer und somit auch zarter - ich habe einige Tests
gemacht und Rindsfilets aus Südamerika, USA, Südafrika und Australien direkt mit
Rindsfilets aus der Schweiz verglichen…
Wir holen
Kräuterbutter immer bei Max, der die unschlagbare selber hergestellte
Kräuterbutter in seinem Restaurant Zihl in Beinwil am See zu seinen Rindsfilets
servierte. Diese Kräuterbutter ist so beliebt, dass er sie seit seiner
Pensionierung stets noch herstellt um all seine Fans beliefern zu können. Die
Rolle lässt sich übrigens einwandfrei im Tiefkühler aufbewahren.
Ich
versuche zuerst das zu verwenden, was ich zuhause habe – ich hasse
Verschwendung! Avocados lassen sich gut einige Tage im Kühlschrank aufbewahren,
wenn sie beim Kauf nicht zu weich/reif ist. Unreife Avocados reifen schnell nach,
wenn man sie in Mehl legt.
Cherrytomaten
habe ich auch immer zuhause, da sie roh oder gekocht immer irgendwie
kombinierbar sind, sei es nur als Farbtupfer!
Nicht vergessen
es sich gemütlich und praktisch einrichten, damit man ohne Stress operieren und
kreativ arbeiten kann, das heisst: Ideen ausprobieren und sich auf seine
Haltung konzentrieren und so Fertigkeiten in der Feinmotorik erwerben und praktischer
werden…

Ingredients: beef tenderloin
potatoes
butter
herb salt
rosmarin
olive oil
balsamico
thyme
avocado
cherry tomatoes
slices of bacon
herb butter
Take tenderloin out of the fridge about 1 hour before preparation (and marinate). Prepare the barbeque.
Fried potatoes with rosemary (30 minutes):
Cut unpeeled potatoes into slices. Melt butter in a frying pan and fry potatoes for 15 minutes on each side at medium heat. Season with herb salt and rosemary.Amandines are besides sweet potatoes my favorite potatoes. They do not only have a lovely taste, but can also be used with their skin, since this is very thin (like the one of new potatoes).
Salad (15 minutes):
Mix olive oil, balsamico, herbal salt and (fresh) thyme in a salad bowl. Cut avocado in half, remove the stone (stick tip of knife in it and pull it out), peel and cut into cubes. Cut cherry tomatoes in halves or quarters and put everything into the sauce. Can marinate well for 15 minutes until eating.
Beef fillets from the barbecue (15 minutes):
Cut tenderloin into thick fillets, wrap bacon slice(s) around it and fix with a toothpick. Barbecue on each side for about 5 minutes. Before taking from the barbecue, place a piece of herb butter on the fillets to melt.
Of course the fillets can also be fried in a frying pan and require the same cooking time at medium temperature. I prefer meat from cattle that live outside all year around, feed themselves and have lots of run. Their meat is clearly looser and thus more delicate - I have tested and compared beef tenderloin from South America, the US, South Africa and Australia directly with beef tenderloin from Switzerland...
We always have herb butter from Max, who served the unbeatable home-made herb butter in his restaurant Zihl in Beinwil am See with his tenderloin. This herbal butter is so popular that he still produced it even after retirement to supply all his fans. The roll can be kept perfectly in the freezer.
I first try to use whatever I have at home - I hate wasting! Avocados can be kept in the refrigerator for a few days if they are not too soft/ripe when buying. Immature avocados mature quickly when placed in flour.
I always have cherry tomatoes at home, since they can easily be combined raw or cooked with what so ever, be it only as a dash of colour!
Do not forget to install yourself comfortable and practical, so that you can operate without stress and work creatively, like: Trying out ideas and focusing on your posture in order to acquire skills in fine motor skills and become more practical...
